The mission of the Tri-County Diabetes Alliance is to raise awareness and improve the health of people with diabetes and those at risk for developing diabetes by creating and sustaining an effort to inform, educate, and assist individuals to improve their health.

Sugar Free Kids Retreat

 Is Right In Our Back Yard!

     The Purpose of the American Diabetes Association’s (ADA) camp program in Delaware and the Eastern Shore of Maryland is to provide recreational experiences and diabetes education for children with diabetes and their families. Through the expert guidance of volunteers, children are encouraged to develop their skills for managing their diabetes. Since 1994, Founder Patt Wagner and the American Diabetes Association (ADA) have been providing children with special memories that will last a lifetime. Our traditional retreat is held in the fall, located at Camp Arrowhead, a picturesque wooded setting along the Rehoboth Bay. Participants will sleep in log cabin. We have many outdoor activities including: swimming, boating, rock climbing, and archery that challenges the child to mange their diabetes and become strong confident leaders.

     Last year Nicole Johnson Miss America 1999 was our Key Note Speaker. She has type 1 Diabetes and is a Board Member of the ADA. Her strength and Knowledge in type 1 was an extra treat for the participants. We do provide scholarships for families, who qualify for financial assistance to waive the registration fees. The retreat provides an array of certified professional speakers in diabetes management plus workshops on sports and exercise techniques. Dietitians speak about the importance of a healthy diet. Don’t miss the opportunity to bond with your family, meet new people, and learn about diabetes.

     Management is provided by competent and bonded volunteers, certified diabetes educators, physicians, nurses, and parents of children with diabetes. These volunteers strive to make the “home away from home” experience one that teaches new techniques for good diabetes control through diet, exercise, insulin and blood sugar monitoring. The skills learned may lead to better control when the child returns home..

The Tri-County Diabetes Alliance will sponsor and conduct several health education and outreach programs addressing prevention of pre-diabetes and diabetes. This will include presentations and free health screenings in a variety of settings including schools, worksites, faith based communities, and other community centers. Healthy Food Choices- for YOU! May 2007

Trying to make healthy food choices has become somewhat confusing and overwhelming for many people with diabetes. Every day it seems the information changes on what is good or not good for you to eat. But there are a few suggestions that have not changed over time which might help you make better choices, both for yourself, your family and your friends.

 

1. Eat fruits and vegetables of different colors more often.
2. Choose whole grain foods more often.
3. Choose fish more often.
4. Choose lean meats and poultry without the skin more often.
5. Try dried beans and lentils for a healthy meal each week.
6. Make your dairy products low or non- fat.
7. Drink more water or calorie free beverages.
8. Choose liquid oil over solid and use sparingly.
9. Eat less high calorie snacks, like chips, cookies and cakes.
10. Remember- how much you eat is as important as what you eat- portions matter!

Recipes

Now try this delicious recipe from the American Diabetes Association using some of those vegetables!!! Add a fruit salad and the meal is done!

Vegetable Lasagna
(Number of servings- 4 Serving size- 1 cup)

1 cup sliced carrots
1 cup sliced zucchini
˝ cup diced red pepper
1 cup chopped spinach
1 cup low fat cottage cheese
˝ cup part-skim ricotta cheese
˝ cup egg substitute
˝ tsp. basil
˝ tsp. oregano
Fresh ground pepper to taste
2 cups low- fat, low- sodium marinara sauce
9-10 uncooked lasagna noodles


Prepare the vegetables:
Steam the carrots 2 minutes, add zucchini and steam 2 more minutes; add red pepper and steam 2 more minutes; add the spinach and steam 1 more minute.
Remove vegetables from heat. Set aside.
Combine all remaining ingredients except the marinara sauce and lasagna noodles.

Assemble the lasagna:
Place a little sauce on bottom of casserole dish.
Place 3 noodles on top of sauce.
Add layer of vegetable and cover with a layer of the cheese mixture. Add some sauce.
Repeat.
Add last layer of noodles and top with some sauce.
Refrigerate overnight. (If you prefer to bake the lasagna immediately, cook the pasta before layering it.)
The next day preheat oven to 3500.
Bake lasagna for 40 minutes till bubbly.
Let stand 10 minutes prior to serving.

Sodium- 520 mg.
Total Carbohydrates- 46 grams
